Matching Sushi with Wine
Delicate flavours of the fish need to be balanced with a delicate wine. Wasabi, once thought of as a wine killer, is now considered like any other spice and simply needs to be tamed by the wine. Fresh fruity whites such as those produced in New Zealand are great choices. Earthy reds make a great union with the elemental essence created by the sea. Try a medium bodied Pinot Noir, Valpolicella, or Chianti. Experiment.
